- 1 pound chicken breasts
- 1 cup orzo pasta
- 4 cups chicken broth
- 1 lemon, juiced
- 2 cups spinach
- 2 carrots, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat. Add onions and carrots, and sauté until soft.
- Add garlic and thyme, cooking for another minute.
- Pour in the chicken broth and bring to a boil.
- Add chicken breasts and cook until fully cooked through, about 15-20 minutes.
- Remove chicken, shred it, and return it to the pot along with the orzo.
- Cook orzo according to package instructions, about 8-10 minutes.
- Add spinach and lemon juice, stirring until spinach wilts.
- Season with salt and pepper. Serve warm.
