Lemon Chicken Orzo Soup

A light and refreshing soup that combines tender chicken, flavorful orzo, and a hint of lemon for the perfect comfort meal.

  • 1 pound chicken breasts
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 lemon, juiced
  • 2 cups spinach
  • 2 carrots, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and carrots, and sauté until soft.
  2. Add garlic and thyme, cooking for another minute.
  3. Pour in the chicken broth and bring to a boil.
  4. Add chicken breasts and cook until fully cooked through, about 15-20 minutes.
  5. Remove chicken, shred it, and return it to the pot along with the orzo.
  6. Cook orzo according to package instructions, about 8-10 minutes.
  7. Add spinach and lemon juice, stirring until spinach wilts.
  8. Season with salt and pepper. Serve warm.

Notes

  • For a creamier soup, add a splash of cream at the end.
  • Feel free to add more vegetables like peas or corn.
