Juicy Blueberry Cream Cheese Muffins

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup blueberries, fresh or frozen

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, beat the cream cheese and butter until creamy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the blueberries.
  5. Divide the batter among the muffin cups, filling each about 2/3 full.
  6. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool before serving.

Notes

  • For a sweeter muffin, add an extra 1/4 cup of sugar.
  • Feel free to substitute the blueberries with other berries if desired.
