  • 2 large eggs

  • 1 1/2 cups grated carrots
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla.
  4. Gradually add the dry ingredients to the wet ingredients until just combined.
  5. Fold in the grated carrots.
  6. Fill the cupcake liners with batter about 2/3 full.
  7. In a small bowl, beat the cream cheese, powdered sugar, and lemon juice until smooth.
