Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the granulated sugar, brown sugar, oil, eggs, and vanilla until combined.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fold in the grated carrots.
  6. Fill the cupcake liners halfway with the carrot cake batter.
  7. In a separate bowl, beat the cream cheese and powdered sugar until smooth.
  8. Spoon a dollop of the cream cheese mixture on top of the carrot batter, then top with additional carrot batter.
  9. Bake for 20-25 minutes or until a toothpick comes out clean.
