  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the pureed peaches and vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  7. Fill the cupcake liners with the batter and bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let the cupcakes cool completely.
  9. For the frosting, beat the cream cheese until smooth, then gradually add in the powdered sugar and heavy cream until fluffy.
  10. Frost the cooled cupcakes with the cream cheese frosting and enjoy!

  • For more peach flavor, add diced peaches into the batter.
