  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. In a mixing bowl, combine flour, sugar, and salt. Add the softened butter and mix until crumbly.
  3. Press half of the mixture into the bottom of the prepared baking dish.
  4. In another bowl, whisk together eggs, sugar, lemon zest, lemon juice, and baking powder.
  5. Pour the lemon mixture over the crust in the baking dish.
  6. Crumble the remaining flour mixture on top of the lemon filling.
  7. Bake for 30-35 minutes or until golden brown.
  8. Let cool before cutting into bars.
