  • 1 package yellow cake mix
  • 1 cup crushed pineapple, drained
  • 1 cup coconut milk
  • 1/2 cup shredded coconut
  • 1 cup whipped topping
  • 1/4 cup maraschino cherries, for garnish

Instructions

  1. Preheat the oven according to cake mix instructions.
  2. Prepare the cake mix as directed and bake in a 9×13 inch pan.
  3. Once baked, let the cake cool slightly, then poke holes all over the top.
  4. In a bowl, mix crushed pineapple and coconut milk, then pour over the cake.
  5. Refrigerate for at least 2 hours to allow the cake to soak up the liquid.
  6. Top with whipped topping and sprinkle with shredded coconut.
