Grilled Salsa Verde Pepper Jack Chicken

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 6 ounces pepper jack cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • salt to taste
  • pepper to taste
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, garlic powder, cumin, salt, and pepper.
  3. Brush the mixture onto both sides of the chicken breasts.
  4. Grill the chicken for 6-7 minutes on each side until fully cooked.
  5. In the last few minutes of grilling, spoon salsa verde over each piece of chicken and top with shredded pepper jack cheese.
  6. Cover the grill to melt the cheese, about 2-3 minutes.
  7. Remove from the grill, garnish with cilantro, and serve.
