  • 1 pound beef tenderloin, sliced
  • 4 ounces turkey bacon, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tablespoons Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, cook the turkey bacon over medium heat until crisp. Remove and set aside.
  2. In the same skillet, add the beef and cook until browned. Remove and set aside.
  3. Add onions and garlic to the skillet and sauté until softened.
  4. Stir in the mushrooms and cook until browned.
  5. Sprinkle flour over the mixture and stir to combine, cooking for 1 minute.
  6. Gradually pour in the beef broth, stirring constantly to avoid lumps.
  7. Stir in the sour cream and Dijon mustard until smooth.
  8. Add the beef and turkey bacon back to the skillet, and cook until heated through.
  9. Season with salt and pepper to taste.
  10. Serve hot, garnished with fresh parsley.

Notes

  • This dish can be served over egg noodles, rice, or mashed potatoes.
  • For a creamier sauce, add more sour cream.
