  • 1 cup pumpkin puree
  • 1 cup dairy-free chocolate chips
  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp sea salt

Instructions

  1. In a medium bowl, combine pumpkin puree, almond butter, maple syrup, vanilla extract, cinnamon, nutmeg, and sea salt. Mix until smooth.
  2. Melt dairy-free chocolate chips in a microwave or double boiler until fully melted.
  3. In muffin liners, pour a layer of melted chocolate on the bottom, then add a layer of the pumpkin mixture, followed by another layer of melted chocolate on top.
  4. Refrigerate for at least one hour to set.
  5. Once set, remove from liners and serve chilled.

Notes

  • Make sure to use pumpkin puree, not pumpkin pie filling for the correct flavor.
