1 cup pumpkin puree
1 cup brown sugar
1/2 cup granulated sugar
1/2 cup unsalted butter, melted
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 cup chocolate chips
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, combine pumpkin puree, brown sugar, granulated sugar, melted butter, egg, and vanilla. Mix until well combined.
In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Fold in the chocolate chips.
Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
Bake for 10-12 minutes or until the edges are golden brown.
Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For chewier cookies, add an extra tablespoon of melted butter.
