  • 1 pound boneless chicken thighs
  • 2 tablespoons red curry paste
  • 1 can coconut milk
  • 4 cups chicken broth
  • 2 cups mixed vegetables (carrots, bell peppers, snap peas)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. In a large pot, heat some oil over medium heat and sauté the garlic and ginger until fragrant.
  2. Add the chicken thighs and cook until browned on all sides.
  3. Stir in the red curry paste and cook for another minute.
  4. Pour in the coconut milk and chicken broth, then bring to a simmer.
