Easy Thai Chicken Curry Soup

A warm and comforting soup that combines tender chicken with aromatic Thai spices.

  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 cups mixed vegetables (carrots, bell peppers, snap peas)
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • Juice of 1 lime
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced chicken and cook until browned.
  2. Add onion, garlic, and ginger; sauté until softened.
  3. Stir in red curry paste and cook for 1 minute.
  4. Add chicken broth and coconut milk, bring to a simmer.
  5. Add mixed vegetables, fish sauce, and brown sugar. Simmer until vegetables are tender.
  6. Remove from heat and stir in lime juice.
  7. Serve hot, garnished with fresh cilantro.

Notes

  • Adjust the spice level by using more or less curry paste.
  • Add extra vegetables to make it heartier.
