  • 4 boneless, skinless chicken thighs
  • 1 cup diced tomatoes

  • 2 cloves garlic, minced
  • 1 tablespoon Moroccan spice blend
  • 1/4 cup chicken broth
  • 1 tablespoon honey
  • 1/4 cup dried apricots, chopped

Instructions

  1. Place chicken thighs in the crockpot.
  2. In a bowl, combine diced tomatoes, onion, garlic, Moroccan spice blend, chicken broth, honey, and dried apricots.
  3. Pour the mixture over the chicken in the crockpot.
  4. Cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  5. Shred the chicken and mix with the sauce before serving.
