Easy Summer Meals Ideas : Crockpot Chicken Tikka Masala

A delicious and easy-to-make summer meal that combines tender chicken with rich tikka masala flavors, all cooked in a crockpot.

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup plain yogurt
  • 1 tablespoon garam masala
  • 2 teaspoons ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 can diced tomatoes
  • 1 cup coconut milk
  • 1 tablespoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped cilantro

Instructions

  1. In a large bowl, mix yogurt, garam masala, cumin, turmeric, paprika, garlic, ginger, salt, and pepper.
  2. Add chicken thighs and coat them well with the mixture. Let marinate for at least 30 minutes.
  3. Place marinated chicken in the crockpot and add diced tomatoes and coconut milk.
  4. Cook on low for 6-8 hours or on high for 4 hours, until chicken is tender.
  5. Before serving, shred the chicken in the crockpot and mix well.
  6. Garnish with chopped cilantro and serve over rice or with naan.

Notes

  • This dish can be made a day in advance and reheated when ready to serve.
  • Adjust the spice level by adding more or less paprika and black pepper.
