- 2 pounds boneless, skinless chicken thighs
- 1 cup plain yogurt
- 1 tablespoon garam masala
- 2 teaspoons ground cumin
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 can diced tomatoes
- 1 cup coconut milk
- 1 tablespoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped cilantro
- In a large bowl, mix yogurt, garam masala, cumin, turmeric, paprika, garlic, ginger, salt, and pepper.
- Add chicken thighs and coat them well with the mixture. Let marinate for at least 30 minutes.
- Place marinated chicken in the crockpot and add diced tomatoes and coconut milk.
- Cook on low for 6-8 hours or on high for 4 hours, until chicken is tender.
- Before serving, shred the chicken in the crockpot and mix well.
- Garnish with chopped cilantro and serve over rice or with naan.
Notes
- This dish can be made a day in advance and reheated when ready to serve.
- Adjust the spice level by adding more or less paprika and black pepper.
