  • 4 chicken thighs
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 cup diced tomatoes
  • 1/2 cup chicken broth
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 1/2 cup olives, pitted
  • 1/4 cup chopped cilantro

Instructions

  1. In a small bowl, mix the spices: cumin, coriander, paprika, cinnamon, and cayenne pepper.
  2. Rub the spice mixture all over the chicken thighs.
  3. Place the onions, garlic, and carrots in the bottom of the crockpot.
  4. Add the chicken thighs on top of the vegetables.
  5. Pour the diced tomatoes and chicken broth over the chicken.
  6. Cover and cook on low for 6-8 hours or until chicken is tender.
  7. Stir in the olives and cilantro before serving.
