- 4 chicken thighs
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- 1 cup diced tomatoes
- 1/2 cup chicken broth
- 1 onion, sliced
- 2 cloves garlic, minced
- 3 carrots, sliced
- 1/2 cup olives, pitted
- 1/4 cup chopped cilantro
- In a small bowl, mix the spices: cumin, coriander, paprika, cinnamon, and cayenne pepper.
- Rub the spice mixture all over the chicken thighs.
- Place the onions, garlic, and carrots in the bottom of the crockpot.
- Add the chicken thighs on top of the vegetables.
- Pour the diced tomatoes and chicken broth over the chicken.
- Cover and cook on low for 6-8 hours or until chicken is tender.
- Stir in the olives and cilantro before serving.
