Ingredients

  • 1 cup sharp cheddar cheese, shredded
  • 4 cups vegetable broth
  • 1 cup milk
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  2. Add broccoli and vegetable broth, bring to a boil.
  3. Reduce heat and simmer for 10 minutes until broccoli is tender.
  4. In a separate bowl, mix milk and cornstarch until smooth, then add to the pot.
  5. Stir in cheddar cheese until melted and smooth. Season with salt and pepper.
  6. Serve hot.
