  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup Gruyère cheese, shredded
  • 4 baguette slices

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the short ribs and sear until browned on all sides.
  2. Remove the ribs and set aside. In the same pot, add onions and cook until caramelized.
  3. Add garlic and cook for another minute.
  4. Pour in red wine, scraping up any browned bits from the bottom.
  5. Add beef broth, thyme, bay leaf, and short ribs back to the pot. Bring to a boil, then reduce heat and simmer for 2 hours.
  6. Remove the short ribs, shred the meat, and discard bones. Return meat to the pot.
  7. Serve in bowls topped with a slice of baguette and melted Gruyère cheese.
