- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup Gruyère cheese, shredded
- 4 baguette slices
- In a large pot, heat olive oil over medium heat. Add the short ribs and sear until browned on all sides.
- Remove the ribs and set aside. In the same pot, add onions and cook until caramelized.
- Add garlic and cook for another minute.
- Pour in red wine, scraping up any browned bits from the bottom.
- Add beef broth, thyme, bay leaf, and short ribs back to the pot. Bring to a boil, then reduce heat and simmer for 2 hours.
- Remove the short ribs, shred the meat, and discard bones. Return meat to the pot.
- Serve in bowls topped with a slice of baguette and melted Gruyère cheese.
