  • 2 tablespoons red curry paste
  • 4 cups chicken broth
  • 1 can (14 oz) coconut milk
  • 2 cups mixed vegetables (carrots, bell peppers, and snap peas)
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in onions, garlic, and ginger; sauté until fragrant.
  4. Add red curry paste and stir for another minute.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat, add coconut milk and mixed vegetables.
  7. Simmer for 10-15 minutes until vegetables are tender.
  8. Season with soy sauce and lime juice.
  9. Garnish with fresh cilantro before serving.
