  • 1 medium butternut squash
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked lentils
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the butternut squash in half and scoop out the seeds.
  3. Drizzle olive oil over the squash halves and place them cut-side down on a baking sheet.
  4. Bake for about 30-35 minutes until soft.
  5. In a pot, sauté onions and garlic until translucent.
  6. Add cooked squash, vegetable broth, cumin, salt, and pepper.
  7. Bring to a simmer and cook for 10 minutes.
  8. Blend until smooth; stir in lentils and garnish with parsley.
