- 1 medium butternut squash
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked lentils
- 2 tablespoons fresh parsley, chopped
- Preheat your oven to 400°F (200°C).
- Cut the butternut squash in half and scoop out the seeds.
- Drizzle olive oil over the squash halves and place them cut-side down on a baking sheet.
- Bake for about 30-35 minutes until soft.
- In a pot, sauté onions and garlic until translucent.
- Add cooked squash, vegetable broth, cumin, salt, and pepper.
- Bring to a simmer and cook for 10 minutes.
- Blend until smooth; stir in lentils and garnish with parsley.
