Ingredients

  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound gnocchi
  • 4 ounces turkey bacon, diced
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in minced garlic and cook for an additional minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add in the gnocchi and let simmer until they float.
  6. Stir in the turkey bacon and kale, cooking until the kale wilts.
  7. Reduce heat, add heavy cream, and Italian seasoning. Stir until combined.
  8. Season with salt and pepper to taste.
  9. Serve hot and enjoy!

Notes

  • For a lighter version, you can substitute heavy cream with half-and-half.
  • This soup can be made ahead of time and reheated.
