  • 1 medium butternut squash
  • 1 cup cooked lentils
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 clove garlic, minced
  • 1 tablespoon fresh ginger, grated

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squash in half, remove the seeds, and drizzle with olive oil.
  3. Roast the squash in the oven for about 40 minutes, until tender.
  4. In a pot, combine roasted squash, lentils, vegetable broth, coconut milk, garlic, ginger, salt, and spices.
  5. Bring to a simmer and cook for 10 minutes.
  6. Puree the soup until smooth using an immersion blender.
  7. Serve warm with a drizzle of coconut milk on top.

Notes

  • For extra creaminess, add more coconut milk.
  • Top with roasted pumpkin seeds for crunch.
