- 1 medium butternut squash, peeled and cubed
- 4 slices turkey bacon
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 2 tablespoons olive oil
- In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and set aside.
- Add the onion and garlic to the pot. Sauté until translucent.
- Add the butternut squash and broth. Bring to a boil, then reduce heat and simmer until squash is tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream, salt, pepper, and nutmeg. Heat through.
- Serve with crumbled turkey bacon on top.
