  • 1 medium butternut squash, peeled and cubed
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and set aside.
  2. Add the onion and garlic to the pot. Sauté until translucent.
  3. Add the butternut squash and broth. Bring to a boil, then reduce heat and simmer until squash is tender.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in the heavy cream, salt, pepper, and nutmeg. Heat through.
  6. Serve with crumbled turkey bacon on top.
