  • 1 pound chicken breast, cooked and shredded
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • salt to taste
  • pepper to taste
  • 1 cup frozen peas
  • 2 cups diced potatoes
  • 1 cup puff pastry, rolled out

Instructions

  1. In a large pot, sauté the onions, carrots, and celery over medium heat until softened.
  2. Add the diced potatoes and chicken broth to the pot. Bring to a simmer and cook until the potatoes are tender.
  3. Stir in the shredded chicken, peas, heavy cream, thyme, garlic powder, salt, and pepper. Let simmer for another 10 minutes.
  4. Meanwhile, preheat the oven to 400°F (200°C). Roll out the puff pastry and cut into squares.
  5. Transfer the soup to a baking dish, and top with puff pastry squares. Bake for 20 minutes or until the pastry is golden brown.

Notes

  • For a thicker soup, you can add a cornstarch slurry.
  • Feel free to add your favorite vegetables.
