- 1 pound chicken breast, cooked and shredded
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 cup onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- salt to taste
- pepper to taste
- 1 cup frozen peas
- 2 cups diced potatoes
- 1 cup puff pastry, rolled out
- In a large pot, sauté the onions, carrots, and celery over medium heat until softened.
- Add the diced potatoes and chicken broth to the pot. Bring to a simmer and cook until the potatoes are tender.
- Stir in the shredded chicken, peas, heavy cream, thyme, garlic powder, salt, and pepper. Let simmer for another 10 minutes.
- Meanwhile, preheat the oven to 400°F (200°C). Roll out the puff pastry and cut into squares.
- Transfer the soup to a baking dish, and top with puff pastry squares. Bake for 20 minutes or until the pastry is golden brown.
