- 1 cup split peas
- 4 cups chicken broth
- 2 turkey bacon strips
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt to taste
- Pepper to taste
- In a large pot, cook the turkey bacon until crispy. Remove and chop.
- Add onion, carrots, celery, and garlic to the pot and cook until softened.
- Add split peas, broth, thyme, chopped bacon, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for about 1 hour or until peas are tender.
