  • 1 cup split peas
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • 2 cups cooked ham, diced
  • Salt and pepper to taste

Instructions

  1. Rinse the split peas under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, carrots, and celery; sauté until softened.
  4. Stir in garlic and cook for another minute.
  5. Add chicken broth, split peas, thyme, and bay leaf; bring to a boil.
  6. Reduce heat and simmer for 45 minutes, stirring occasionally.
  7. Add diced ham and continue to simmer for an additional 10 minutes.
  8. Remove bay leaf and season with salt and pepper to taste.
  9. Serve hot and enjoy!

Notes

  • For a creamier soup, use an immersion blender to puree some of the soup.
