  • 2 cloves garlic, minced
  • 1 pound cooked chicken, shredded
  • 1 can (15 oz) green chile enchilada sauce
  • 4 cups chicken broth
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add minced garlic and cook for another minute.
  3. Stir in the shredded chicken, enchilada sauce, chicken broth, black beans, corn, and cumin.
  4. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with cheese.
