  • 8 ounces turkey bacon, chopped
  • 1 pound mushrooms, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Add chopped mushrooms, onion, and garlic to the skillet. Sauté until softened.
  3. Transfer mixture to the crockpot. Add chicken broth, thyme, salt, and pepper. Stir to combine.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir in heavy cream and allow to heat through.

Notes

  • For extra depth of flavor, add a splash of white wine when cooking the bacon.
  • Garnish with fresh parsley before serving.
