Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté until softened.
  2. Add garlic and cook for another minute.
  3. Stir in chicken broth, thyme, salt, and pepper. Bring to a boil.
  4. Add shredded chicken, peas, and cream. Mix well.
  5. In a small bowl, combine flour with a little water to make a slurry; add to the soup to thicken.
  6. Top with turkey bacon and cover with rolled pastry dough. Bake until golden brown.
