  • 4 ounces turkey bacon
  • 1 cup onion, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 1 tablespoon thyme, dried
  • 1 cup heavy cream
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and chop.
  2. In the same pot, add the onion, carrots, and celery. Sauté for about 5 minutes until soft.
  3. Stir in the garlic and cook for another minute.
  4. Sprinkle the flour over the vegetables and stir well to combine.
  5. Gradually pour in the chicken broth, stirring constantly until well mixed.
  6. Add the chopped bacon, cooked chicken, peas, and thyme. Bring to a simmer.
  7. Once simmering, stir in the heavy cream and season with salt and pepper. Cook for an additional 2-3 minutes until heated through.
  8. Serve hot and enjoy!

Notes

  • This soup can be thickened by adding more flour if desired.
  • Feel free to use leftover turkey for an even lighter version.
