- 1 tablespoon olive oil
- 4 ounces turkey bacon
- 1 cup onion, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup frozen peas
- 1 tablespoon thyme, dried
- 1 cup heavy cream
- salt to taste
- pepper to taste
- In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and chop.
- In the same pot, add the onion, carrots, and celery. Sauté for about 5 minutes until soft.
- Stir in the garlic and cook for another minute.
- Sprinkle the flour over the vegetables and stir well to combine.
- Gradually pour in the chicken broth, stirring constantly until well mixed.
- Add the chopped bacon, cooked chicken, peas, and thyme. Bring to a simmer.
- Once simmering, stir in the heavy cream and season with salt and pepper. Cook for an additional 2-3 minutes until heated through.
- Serve hot and enjoy!
Notes
- This soup can be thickened by adding more flour if desired.
- Feel free to use leftover turkey for an even lighter version.
