Ingredients

  • 1 pound chicken breast, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound gnocchi
  • 1 cup spinach, chopped
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced chicken and cook until browned.
  3. Add carrots, celery, and garlic; sauté for about 5 minutes.
  4. Pour in chicken broth and bring to a boil.
  5. Add gnocchi and cook according to package instructions.
  6. Stir in spinach, heavy cream, and Italian seasoning. Season with salt and pepper.
  7. Simmer for 5 minutes and serve warm.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
