Ingredients

  • 2 pounds carrots, peeled and sliced
  • 1 cup dried prunes, pitted and chopped
  • 1/2 cup honey
  • 1/4 cup orange juice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 tablespoons butter
  • 1/2 cup water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, combine the carrots, prunes, honey, orange juice, cinnamon, nutmeg, and butter.
  3. Add water and bring to a boil over medium heat.
  4. Cover and simmer for 10-15 minutes, or until the carrots are tender.
  5. Transfer the mixture to a baking dish and bake for 30 minutes.
  6. Stir occasionally and keep an eye on the liquid, adding more water if necessary.
  7. Once done, let it cool slightly before serving.

Notes

  • This dish can be made ahead and reheated.
  • Best served warm or at room temperature.
