- 4 cups grated carrots
- 1/2 cup sugar
- 1/4 cup butter, melted
- 4 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup gluten-free flour
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the grated carrots, sugar, and melted butter.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract, baking powder, salt, cinnamon, nutmeg, and gluten-free flour.
