Ingredients

  • 4 cups grated carrots
  • 1/2 cup sugar
  • 1/4 cup butter, melted
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup gluten-free flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the grated carrots, sugar, and melted butter.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract, baking powder, salt, cinnamon, nutmeg, and gluten-free flour.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 45 minutes or until the top is golden brown and a toothpick inserted comes out clean.
  7. Let cool for a few minutes before serving.

Notes

  • For a sweeter soufflé, adjust the sugar to taste.
