  • 2 pounds baby potatoes
  • 1 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the baby potatoes in half and place them in a large bowl.
  3. In a separate bowl, mix together the olive oil, garlic powder, onion powder, salt, and black pepper.
  4. Pour the oil mixture over the potatoes and toss until they are evenly coated.
  5. Add the Parmesan cheese and toss again until the potatoes are covered.
  6. Spread the potatoes in a single layer on a baking sheet.
  7. Bake for 25-30 minutes or until golden brown and crispy, stirring halfway through.
  8. Remove from the oven and sprinkle with fresh parsley before serving.
