  • 3 pounds bone-in short ribs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon tomato paste
  • 2 sprigs fresh thyme
  • 1 bay leaf

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the short ribs with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat.
  4. Sear the short ribs on all sides until browned. Remove and set aside.
  5. Add onion, carrots, and garlic to the pot and sauté until softened.
  6. Stir in beef broth, Worcestershire sauce, tomato paste, thyme, and bay leaf.
  7. Return short ribs to the pot and bring to a simmer.
  8. Cover and transfer to the oven. Cook for 2.5 to 3 hours, until tender.
  9. Remove from oven and let rest before serving.

Notes

  • For best results, allow the dish to rest overnight in the refrigerator for deep flavor.
  • Serve with mashed potatoes or polenta for a complete meal.
