  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the pork tenderloin with salt and black pepper.
  3. In a skillet, heat olive oil over medium-high heat and sear the pork on all sides until golden brown.
  4. Transfer the pork to a baking dish and roast in the preheated oven for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
  5. While the pork is roasting, make the sauce by combining heavy cream, Dijon mustard, garlic, and thyme in the skillet over low heat, stirring until smooth.
  6. Once the pork is done, let it rest before slicing and serve with Dijon cream sauce drizzled on top.
