1 cup rolled oats
1/2 cup pumpkin puree
1/4 cup protein powder
1/4 cup almond butter
1/4 cup honey or maple syrup
1 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
1/4 cup chocolate chips (optional)
Instructions
In a large mixing bowl, combine the rolled oats, pumpkin puree, protein powder, almond butter, honey or maple syrup, pumpkin pie spice, and vanilla extract.
Mix thoroughly until all ingredients are well combined.
If using, fold in chocolate chips.
Refrigerate the mixture for about 30 minutes to make it easier to handle.
Once chilled, scoop out small portions and roll them into balls.
Store the protein balls in an airtight container in the fridge.
Notes
For a vegan option, replace honey with maple syrup.
Feel free to add nuts or seeds for extra crunch.
