  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the pumpkin puree, granulated sugar, brown sugar, and butter until smooth.
  3. Add the eggs and vanilla extract, mix well.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. If using, fold in the chocolate chips.
  7. Drop tablespoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes, or until the edges are lightly browned.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
