  • 1 large egg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, sugar, and brown sugar until smooth.
  3. Beat in the pumpkin puree and egg until well combined.
  4. In a separate bowl, mix together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop rounded tablespoons of dough onto a baking sheet.
  7. Sprinkle with cinnamon-sugar mixture if desired.
  8. Bake for 10-12 minutes, until edges are set.
