  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 cup streusel topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, and vegetable oil until combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. If using, fold in the nuts.
  7. Pour the batter into a greased loaf pan and sprinkle streusel topping over the top.
  8. Bake for 60-70 minutes or until a toothpick inserted comes out clean.
  9. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
