Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups zucchini, chopped
  • 1 cup diced tomatoes
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • Salt and Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
  3. Add zucchini and chicken, season with Italian seasoning, salt, and pepper, cooking until chicken is browned.
  4. Stir in diced tomatoes, then transfer the mixture to a casserole dish.
  5. Top with shredded mozzarella cheese.
  6. Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly.
