  • 1 cup diced onion
  • 2 cups enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef with the onion until the meat is cooked through.
  3. Add the cumin, garlic powder, salt, and pepper to the beef mixture.
  4. Spread a little enchilada sauce in the bottom of a baking dish.
  5. Fill each tortilla with the beef mixture and some cheese, roll them up, and place in the dish.
  6. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  7. Bake for 20 minutes or until cheese is bubbly.
