Easy Ground Beef Enchiladas

A delicious and simple recipe for easy ground beef enchiladas that the entire family will enjoy.

Ingredients

  • 1 pound ground beef
  • 1 can enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese
  • 1 onion, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté the chopped onion until translucent.
  3. Add the ground beef, garlic powder, cumin, and salt. Cook until the beef is browned.
  4. Pour a little enchilada sauce in the bottom of a baking dish.
  5. Fill each tortilla with the beef mixture and cheese, roll them up, and place them seam-side down in the dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with more cheese.
  7. Bake for 20-25 minutes or until the cheese is bubbly.

Notes

  • For extra flavor, add chopped fresh cilantro as a topping.
  • Make it vegetarian by substituting lentils for meat.
