Easy Greek Chicken Meatballs with Lemon Orzo

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, zested and juiced
  • 2 cups orzo
  • 4 cups chicken broth

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, feta, garlic, oregano, salt, pepper, lemon zest, and lemon juice. Mix well.
  3. Form into meatballs and place on a baking sheet.
  4. Bake for 20 minutes or until golden brown.
  5. Meanwhile, in a pot, bring chicken broth to a boil. Add orzo and cook until al dente, about 8-10 minutes.
  6. Serve meatballs over orzo, drizzling with extra lemon juice if desired.
