  • 1 pound chicken, cooked and diced
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup frozen mixed vegetables
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 pie crusts, store-bought or homemade

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large skillet, cook the turkey bacon until crispy and set aside. In the same skillet, add the mixed vegetables and cook for 2-3 minutes.
  3. Add the flour and stir to coat the vegetables, cooking for about 1 minute.
  4. Slowly add the chicken broth while stirring to avoid lumps. Bring to a simmer until the mixture thickens.
  5. Stir in the diced chicken, crumbled turkey bacon, garlic powder, onion powder, salt, and black pepper.
  6. Place one pie crust into a pie dish and pour the chicken mixture into the crust.
  7. Cover with the second pie crust, crimp the edges, and cut a few slits in the top to allow steam to escape.
  8. Bake for 30-35 minutes or until the crust is golden brown.
  9. Let it cool for a few minutes before serving.

Notes

  • This dish can be prepared ahead of time and stored in the fridge before baking.
  • Feel free to add more vegetables such as peas or corn if desired.
