1 cup all-purpose flour
1/2 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1 cup pastry cream
1/2 cup chocolate glaze
Instructions
Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
In a bowl, whisk together the flour, baking powder, baking soda, and salt.
In another bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Divide the batter evenly among the cupcake liners.
Bake for 18-20 minutes or until a toothpick comes out clean. Allow to cool completely.
Once cooled, cut a small hole in each cupcake and fill with pastry cream.
Top with chocolate glaze and serve.
Notes
For a richer flavor, use dark chocolate for the glaze.
