  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the carrots, then cut them in half.
  3. In a bowl, mix the olive oil, garlic powder, salt, and pepper.
  4. Toss the carrots in the olive oil mixture until coated.
  5. Place the carrots on a baking sheet and smash them down gently with a fork.
  6. Sprinkle the grated parmesan cheese over the smashed carrots.
  7. Bake in the oven for 20-25 minutes or until golden brown.
  8. Remove from the oven and garnish with fresh parsley.

Notes

  • For an extra kick, add cayenne pepper to the olive oil mixture.
