Ingredients

  • 2 medium sweet potatoes
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs
  • 1/4 cup green onions, chopped
  • 1 avocado, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes. Toss them with olive oil, paprika, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. Cook the turkey bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
  5. In the same skillet, cook the eggs to your liking.
  6. Assemble the bowls: start with a base of sweet potatoes, top with eggs, turkey bacon, green onions, and avocado.
  7. Serve warm and enjoy!
