1 pound shrimp, peeled and deveined
2 avocados, diced
2 cups mixed greens
1 cucumber, sliced
1/4 cup red onion, thinly sliced
1/4 cup cherry tomatoes, halved
1/4 cup cilantro, chopped
3 tablespoons olive oil
2 tablespoons lime juice
Salt and pepper to taste
Instructions
In a large skillet, heat olive oil over medium heat. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side until they turn pink and are cooked through.
In a large bowl, combine mixed greens, cucumber, red onion, cherry tomatoes, and cilantro.
Once the shrimp are cooked, allow them to cool slightly and then add to the salad.
Drizzle with lime juice and toss gently to combine.
Serve immediately and enjoy your refreshing salad!
