  • 2 packages of ramen noodles
  • 1 ripe mango, diced
  • 1 avocado, diced
  • 1 cup of shredded carrots
  • 1 bell pepper, sliced
  • ¼ cup of chopped cilantro
  • ¼ cup of soy sauce
  • 2 tablespoons of sesame oil
  • 2 tablespoons of rice vinegar
  • 1 tablespoon of honey
  • 1 tablespoon of lime juice

Instructions

  1. Cook the ramen noodles according to package instructions, drain, and set aside.
  2. In a large bowl, combine the diced mango, avocado, shredded carrots, bell pepper, and cilantro.
  3. In another bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, and lime juice.
  4. Add the cooked ramen noodles to the bowl with the vegetables and pour the dressing over the top.
